Food & Hotel Hanoi 2018 is not a place where only displays products and high technologies of hospitality industry, but also a place that brings academic seminars and enjoyable contests. This year exhibition converges talents in hospitality industry to come and compete at: “Salon Culinaire Hanoi 2018”. Besides, Food & Hotel Hanoi 2018 also brings two short-term training courses are Barista Workshop and Gelato Workshop where participants can learn more about coffee-making and gelato-making skills. Salon Culinaire Hanoi 2018 will be organized for the first time this year
The Salon Culinaire Hanoi 2018 Competition is organized at Food & Hotel Hanoi 2018 for the first time, aiming to create a chance for both local and international culinary talents come to exchange ideas and knowledge, showcase their culinary expertise and service to the industry and the public. The topics are proposed in the contest are: Vietnamese Hot Cooking, Fish and Seafood, Live Vegetable Carving, Chinese Hot Cooking - U.S. Poultry, Chinese Hot Cooking - U.S. Poultry, Hot Cooking - U.S. Cheese, Hot Cooking - U.S. Beef, Fish And Seafood, Live Vegetable Carving, Hot Cooking - U.S. Poultry, Hot Cooking - U.S. Potatoes, Hot Cooking - U.S. Pork, Pasta Hot Cooking and Anchor Live Dessert Making.
The contest will be held during 3 days of the exhibition and given daily prize, attracting attendance of candidates from Vietnam, China and Malaysia with nearly 100 classes entered. The event also received support from following organizations: Ho Chi Minh City Tourism Association (HTA), Singapore Exhibition Services (SES), USA Poultry and Egg Export Council (USAPEEC), Anchor Food Professionals, Potato USA, U.S. Meat Export Federation (USMEF), U.S. Dairy Export Council (USDEC), Le Fruit, Cafés et Thé Folliet.

To begin the series of seminar at Food & Hotel Hanoi 2018, Vietnam Hotel Associations will start with the topic: “Customer Experience Management in the Hospitality Industry” and receive the sharings from speakers who have prestige in industry such as: Mrs. Do Hong Xoan - Chairwoman of Vietnam Hotel Association (VHA), hairman of Vietnam National Administration of Tourism (VNAT), Ms. Nguyen Anh Thu - Director of R&I - Outbox Consulting Co., Ltd, Ms. Nguyen Thi Thuy Minh - Deputy General Manager of Sheraton Hotel Hanoi - Head of Specialists - Vietnam Hospitality Human Resources Organisation (VHRO), and the other top rated professionals in industry.
Barista Workshop and Gelato Workshop
Companioning with the events at Food & Hotel 2018 is B arista Workshop with theme “Coffee is cool”. The course is conducted by Mr. Ross Bright has been involved in the coffee industry as a Master roaster or Barista trainers for nearly ten years, and will be opened at 8:30 AM – 11:30 AM (2018, Nov 28th), and 9:00 AM – 11:00 AM (2018, Nov 29th,30th). The special training program covers all aspects of barista technique, from ingredient evaluation, bean recognition through cupping various coffee to set up & cleaning machine. Besides, the trainees will have a chance to practice for gaining realistic experiences and achieve confirmation letter from the Organizer.
In addition, Gelato Workshop is a worth-mentioning program at Food & Hotel Hanoi 2018. The special training programs guided by the Senior Instructor of Carpigiani Gelato University – Mr. Gabriele Vannucci, is a short-term training course about gelato-making skills, essential skills for chefs, pastry baking and decorating techniques. It will be held during 3 days of exhibition at 10:00 AM – 11:30 AM and 2:00 PM – 3:30 PM everyday. Aiming to give a unique preparation for the upcoming Vietnamese selections of the 2020 Asian Gelato Cup, Gelato Workshop hopes to be a place that provides helpful and enjoyable for participants.
Educational Seminar of MESLAB & VINALAB
Together with VHA Seminar, Vietnam Associations Of Testing Laboratories – VINALAB hosts two special subjects: “Ensuring food safety for restaurants & hotels” and “Safety food ingredients for restaurant” which conducted by professionals in industry such as: by Mr. Nguyen Huu Dung - CEO VinaCert Certification and Inspection Joint Stock Company - General Secretary VINALAB, Prof. Dr. Phan Thi Kim - President of Vietnam Union of Science and Technology Associations, Mr. Pham Ngoc Tran - Former Deputy General Director of Ministry of Science and Technology - Directorate For Standarts, Metrology and Quality.
Moreover, Multi Engineering Solution Laboratory – MESLAB also contributes in supporting specialistic knowledge intinerary with topic: “Mindset innovation & technology improvement to enhance service quality and customer engagement”, and workshop: “Method for testing and evaluation of service packages before launching to ensure customer satisfaction”.
